Ingredients:
For the bottom layer
- 1/2 cup butter – room temperature
- 1/4 cup white granulated sugar
- 1 cup plain flour
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- pinch salt
For the top layer
- 2 large eggs
- 1/2 cup brown sugar
- 3/4 cup maple syrup
- 1/3 cup heavy cream
- 1 teaspoon vanilla extract
- 1 tablespoon plain flour
- 1/4 teaspoon salt
- 1 cup walnuts – roughly chopped
Roadmap:
For the crust
- Preheat oven to 350 degrees. Grease and line with parchment paper an 8 x 8 inch baking dish. Set aside.
- In the bowl of your electric mixer, combine the butter and sugar. Mix on high until well combined and smooth. About 2 minutes. Add the flour, cinnamon, nutmeg and salt. Mix until it starts to combine and starts to clump together, about another minute.
- Pour the crumbly mixture into the prepared baking dish. Using your fingers, press it evenly over the bottom of the pan. Ensuring that it’s as even as you can make it and the entire surface is covered. Bake for 15 – 20 minutes or until lightly golden and set. Remove from oven and place on a cooling rack.
Filling:
- In a clean bowl, combine the eggs, brown sugar, maple syrup, cream, vanilla extract, flour and salt. Whisk on high speed until light and foamy, about 2 minutes.
- Evenly sprinkle chopped walnuts over the cookie base. Pour over the filling mixture.
- Bake for 30 – 35 minutes until the filling is set. Remove from oven and place on a cooling rack to cool completely.
- Lift the bars out of the baking pan when they have cooled. Cut into 16 equal squares.
Store in an airtight container/zip bag for a week or for months in your freezer.
