Leek & 2 Cheese Crustless Quiche

Ingredients:
2 leeks (white & light green parts), thinly sliced
Salt and pepper
2 tablespoons butter
2 tablespoons extra-virgin olive oil
1/2 cup whole milk
4 large eggs
1/4 cup all-purpose flour
6 ounces feta, crumbled
1 cup grated sharp Cheddar
4 scallions, thinly sliced
Roadmap:
- Heat your oven to 350 degrees.
- In a large nonstick skillet, over medium heat, melt the butter, add sliced leeks & a good pinch (about 1/4 teaspoon) salt.
- Sauté the leeks for 2 minutes until they are all coated in butter then mix in a splash (about 2 tablespoons) of water, cover & cook down for 5 minutes or until leeks are cooked through.
- Remove lid & allow remaining liquid to cook off. Should take only about 2 minutes. Remove from heat & set aside to cool a bit.
- Brush olive oil all around (base & sides) of a 9-inch baking dish (round or oval is best as it emulates the shape of a typical quiche), but not crucial.
- In a large bowl, add the milk and eggs and whisk to combine. Add the flour, season with 1/4 teaspoon each of salt and pepper, and whisk just until there is no more dry flour. A tiny lump or two is ok.
- Add the cooled leeks to the egg mixture, along with the feta, half of the Cheddar and half of the scallions, and fold to distribute evenly.
- Pour the mixture into the prepared dish. Top with the remaining Cheddar and scallions.
- Bake until the center is just set, 35 to 40 minutes. If a toothpick in the center comes out clean, it is ready.
- Remove from the oven and allow to cool for 10 minutes. Run a knife around the edge to loosen and then cut into wedges or squares.
The beauty of this quiche is it’s equally as delicious served hot, warm or room temperature.
