UPSIDE DOWN Pear, Brie, and Bacon Puff Pastry Tarts

If you haven’t made upside down puff pastry tarts, it’s time you try the method. You can be as creative with ingredient flavors, textures, sizes & shapes as you wish. The options are endless. 

I personally love the flavor balance of pear, Brie & bacon.  Give this delicious upside down recipe a try & then get creative with your own favorite flavors using the same application.

Total Time:25 min.

Servings: As many as you want

Ingredients: (Amounts depend on how many & how small or large you make the tarts)

  • Sheet/s frozen puff pastry, thawed
  • Ripe but firm pears, thinly sliced
  • Bacon – Cooked and chopped
  • Brie cheese – sliced
  • Honey, Maple syrup or hot honey
  • 1 large egg, lightly beaten with a splash of water (for egg wash)
  • Optional: Salt & pepper sprinkle, Fresh thyme leaves or chopped rosemary for garnish 

Roadmap: 

  1. Preheat oven to 400 degrees & line a large baking sheet with parchment paper.
  2. On the parchment paper, drizzle a spoon (1-2 teaspoons) of honey in several small circles (spaced as far apart as you want your pastry, to build individual tarts). 
  3. On top of each honey drizzle, arrange a single layer of pear slices, slightly overlapping. Top the pears with a few slices of brie and some cooked, crumbled bacon.
  4. On a lightly floured surface, unroll thawed puff pastry sheet and lightly roll out to crease seams. 
  5. Cut pastry into rectangles or squares, large enough to cover all of the ingredient piles you created. Place one puff pastry piece over each pile of ingredients, gently pressing down to seal the edges around the filling to prevent leaks. 
  6. Brush the top of each puff pastry with the egg wash. Bake for 15 to 20 minutes, or until the pastry is puffed and golden brown.
  7. Remove from the oven and let the pastries cool on the baking sheet for about 5 to 10 minutes. Use a large spatula to scrape from parchment & carefully flip each tart over so pear & honey are on top. 
  8. If you’d like, garnish with a salt & pepper sprinkle, fresh thyme leaves or rosemary.

These are best served straight away while pastry is warm. 

Puff pastry is a perfect ingredient, in my opinion. Its versatility is vast, the delicious savory & sweet applications are endless. 

Whether you make one, all of these recipes or get creative & make your own, you now have a “go to” when planning your next get together. 

There isn’t a downside to puff pastry. Just be sure to make enough. Everybody loves it!
