This simple but quite tasty beef & cauliflower one skillet dish, is surprisingly satisfying. Go ahead, surprise yourself & your family.

Ingredients:

2 tablespoons butter – divided

1 bag frozen cauliflower rice, 12-16 ounces

1 1/4 cups beef or chicken stock, or broth

1 small onion, diced

1/2 bell pepper, diced (red, yellow or orange)

2 cloves garlic, grated or minced

1 pound lean ground beef (85% or leaner)

1/2 teaspoon each: granulated garlic, granulated onion, dried thyme, dried oregano

2 tablespoons tomato paste

1/4 cup heavy cream

1 teaspoon salt 

1/4 teaspoon black pepper

2 cups shredded Italian cheese blend divided (mozzarella is ok)

Fresh parsley & or sliced scallions for garnish

Roadmap:

  1. Warm 1 tablespoon of butter in an oven-safe skillet over medium heat. Sauté cauliflower rice for 2 minutes, until beginning to brown. Add stock/broth, cover the skillet with a lid, and continue to cook for 4-5 minutes. Remove from heat, drain any remaining liquid, remove to a bowl & set aside.
  2. With skillet back over medium heat, add the second tablespoon of butter and sauté onion & bell pepper for 2 minutes or until soft and fragrant.
  3. Raise the heat to medium-high and add ground beef. Break it apart with a spatula while adding granulated onion, garlic, thyme, oregano, salt & pepper. Cook until lightly browned, about 5-7 minutes.
  4. Mix in the tomato paste to combine & cook for 1 minute, so the paste doesn’t taste sour & raw.
  5. Add cream & 1/4 cup of shredded cheese. Continue stirring until cheese melts and sauce forms.
  6. Add the reserved cooked cauliflower rice back to the skillet. Mix well to combine. Taste & adjust seasoning if needed.
  7. Top with remaining cheese & place the skillet under the broiler for 1-3 minutes or until the cheese melts completely.
  8. Garnish with parsley & or scallions and serve warm.
