Ingredients:

  • 4 Brioche buns – FOR SANDWICH
  • OR 3-4 cups cooked long grain rice (jasmine, basmati) – FOR BOWLS
  • 8 thick slices of bacon
  • 1 tablespoon olive oil
  • 4 pieces fresh skin on salmon
  • 1/2 teaspoon salt
  • 1/4 teaspoon smoked paprika (regular is fine)
  • 1/4 teaspoon black pepper
  • 1-2 Avocados, sliced (drizzle with lemon or lime to prevent browning)
  • 1 large tomato, sliced
  • Romaine or butter lettuce (amount dependent upon sandwich or bowl)

Tangy Honey Dijon Ranch 

1/2 cup mayonnaise

1/2 cup Greek yogurt (full fat) or sour cream 

1 teaspoon apple cider or white vinegar

1-2 tablespoons dijon mustard (start with 1 tablespoon, taste & adjust once assembled) 

2 teaspoons honey

1/2 teaspoon dried dill

1/2 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 teaspoon smoked paprika (regular is fine)

1/4 teaspoon kosher or sea salt

1/8 teaspoon black pepper

Pinch of cayenne (Optional)

Roadmap:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper, then place the bacon side-by-side on the tray.
  1. Cook the bacon for 15 to 20 minutes or until it’s reached your desired level of crispiness. Make sure to check on it after about 15 minutes, as some ovens cook faster. Remove the tray from the oven and transfer the bacon with tongs to a paper towel-lined plate.
  1. While bacon is roasting, in a bowl, whisk together dressing ingredients & set aside.
  2. Reduce oven to 375. Reline your baking sheet with parchment.
  3. Season both sides of salmon with salt, pepper & paprika.  Place on baking sheet, skin side down & roast for 12-15 minutes or until salmon is just cooked through & flakes easily.

Sandwich assembly:

  1. Toast brioche buns cut side down in a skillet over high heat until lightly golden OR cut side up under the broiler – watch closely.
  2. Spread sauce on both halves of the bun. Layer lettuce, tomato, salmon, top with avocado, bacon & top bun.

Bowl assembly:

  1. Chop tomato, lettuce & bacon into large bite size pieces.
  2. In a large bowl, spoon 3/4 – 1 cup rice & drizzle with sauce.
  3. Top rice with chopped lettuce, tomato, bacon, place salmon & sliced avocado on top. Drizzle with more sauce.
