Ingredients:
3 tbsp extra virgin olive oil
1 lb. smoked sausages , sliced 1/4 inch thick
2 medium onions, chopped (or 1 large)
2 bell peppers (red, yellow or orange), chopped into 1 inch pieces
3- 5 garlic cloves (size depending) , finely minced

1/2 tsp salt

1/2 tsp pepper

3/4 tsp smoked paprika (normal paprika is fine)

1 1/2 cup long grain rice (jasmine or basmati)

1 cup chicken stock

15 ounce can fire roasted diced tomatoes (plain are fine)
3 scallions (green & white parts), sliced
1/4 cup olives (green or kalamata), halved
1/3 cup feta cheese, crumbled
Chopped parsley for topping (optional)

Roadmap:

1. Heat 2 tbsp oil in a large heavy based pot over medium high heat. Add sausage. Sear until golden. Remove & set aside.
2. Add remaining 1 tbsp oil. Add onion, salt, pepper & paprika. Cook for 2 minutes. Add bell peppers & garlic. Cook for another 2 minutes.
3. Add rice, chicken stock, tomatoes and the sausage. Stir, bring to boil, then reduce heat to low so it’s simmering very gently.
4. Cover with lid, cook 20 minutes.
5. Remove pot from stove. Remove lid, add scallions, olives & feta, then put the lid back on. Rest 5 minutes.
Sprinkle with parsley, use a fork to fluff & combine ingredients.

No bland rice here. This dish is bursting with flavor!
Easy to pull together when time is of the essence as well.
